Mike Meade's accomplisments WOW!!!!!!!!!!

B E F O R E........ AND...........

AFTER!

The last 8 months have been a blur!When I started at Weight Watchers back in December 2005 I knew I had an uphill battle to fight, but luckily I started it with a friend and we were able to push each other in the right direction. I never thought I could do it, but 8 months later I have lost 90 lbs, dropped 12 pant sizes, and gone from a 4xl shirt to an L /XL. The look on my doctor's face was priceless! I thought he was going to kiss me (yes I was a little scared).In that time my friend stopped going making it harder to stay on the right track, but I have other amazing friends who have helped keep me keep my eyes on the prize. I am looking forward to the next 8 months and anxious to see what they hold. If I can do this, anyone can. There will be gains, there will be set-backs, there will be times when a box of cookies is gone before you realize what you have just done, but I am here to say that others can do it too. At first I thought ummmmmm Weight Watchers? Not me! but 8 months later I am a believer, and a very satisfied customer!

Mike Meade's Recipe

Strawberry shortcake

Shortcake is not typically low in calories. But make your own biscuit dough, and you can create this incredibly flaky, summertime favorite anytime.

Ingredients
24 medium strawberries, about 10 oz, hulled and quartered (reserve 6 whole berries for garnish) 2 Tbsp orange juice 2 cup all-purpose flour 6 Tbsp sugar 4 tsp baking powder 1/4 tsp table salt 4 Tbsp reduced-calorie margarine, chilled and cut into pieces 2/3 cup fat-free skim milk 2 tsp fat-free skim milk 1 tsp sugar 3/4 cup fat-free whipped topping Instructions1. Preheat oven to 400ºF. Coat a large baking sheet with cooking spray.2. Combine quartered strawberries and orange juice; toss to combine. Set aside.3. In a separate large bowl, whisk together flour, 6 tablespoons of sugar, baking powder and salt. Add margarine; mix together with a fork until mixture resembles coarse meal. Add 2/3 cup of milk; mix until a manageable dough forms. Transfer dough to a lightly floured surface and roll out to 1-inch thickness. Using a 3 1/2-inch round cookie cutter (or round glass), cut dough into six circles. Transfer rounds to baking sheet. Brush tops with 2 teaspoons milk and sprinkle with 1 teaspoon sugar.4. Bake until puffed up and golden, about 20 to 25 minutes. Remove from oven and, while still warm, split in half crosswise (like an English muffin).5. Spoon 1/3 cup of strawberries onto bottom half of each shortcake round. Top with sugar-coated second half. Spoon 2 tablespoons of whipped topping on top and garnish each with a whole strawberry.Chef TipsWe renovated Strawberry Shortcake by:· Using reduced-calorie margarine instead of butter in the dough.· Swapping fat-free milk for whole milk.· Coating the dough with fat-free milk instead of beaten egg.· Reducing the amount of sugar in the dough and using orange juice to replace sugar in the berry filling.

Ingredients
8 average graham cracker(s), mashed into crumbs 2 Tbsp reduced-calorie margarine, melted 4 oz fat-free cream cheese 4 oz light cream cheese 2 Tbsp fresh lemon juice 2 large egg white(s) 1 tsp vanilla extract 1/3 cup sugar 20 oz light fruit pie filling, cherry, warmed
Instructions
Place 12 cupcake liners in a cupcake pan. Combine graham cracker crumbs and margarine; mix well.
Spoon 1 tablespoon of crumb mixture into bottom of each liner and press down gently. Refrigerate until ready to fill.
Beat cream cheeses until fluffy and add lemon juice, egg whites, vanilla extract and sugar; beat until smooth.
Spoon cream cheese mixture evenly into crumb cups. Bake at 375°F for 15 minutes. Cool.
Top each cheese cake with 1 tablespoon cherry pie filling.

I just want to say that I'm really proud of everyone and together we can help each other.

To date, since July 2005, my brother Dan and I have lost a combined weight of 100 LBS. :)
